Part 1 – Have you ever wondered what goes into the cost of your steaks, your hamburger, your Sunday roast?

When a rancher is ready to send his finished steer to the butcher, the price is determined primarily by the CME – Chicago Mercantile Exchange.

The CME trades commodities like orange juice, gold & silver, dairy and beef. It’s really interesting to watch the markets and see how they change over time.

We are taking orders now for about 6 - 8 weeks out. We were starting to see some of the pressure on the butcher shops loosen up, but with all of the commodity markets in upheaval, that pressure is building again.
